my dad isn’t the best at cooking and we are always eating frozen burgers, frozen Meals or BBQ salmon and chicken. he never tries to cook and if i ask him if i can teach him how to cook (i love to cook myself), he says ” if i had the time to make a nice meal every day, i would, but i am always so busy, you know that.” so i am looking for easy 5 minute meals for him to learn (and to keep me from this junky diet!). we barely have food in the house too. no potatoes or veggies. just bread, crackers, meat, noodles, no spices, no onions, soy sauce, oil, cheese, milk, lettuce, sometimes eggs, rice and occasionally fruit. i am looking for dinner recipes. thank you!
Buy a 3-pound bag of frozen boneless/skinless chicken breasts and thaw them in the fridge for 2-3 days. Spray the bottom of a 13 x 9 x 2 glass baking dish with vegetable oil/canola oil spray, place the breasts in the dish, sprinkle with seasoned salt, and bake at 425 degrees for 45 minutes until inside temperature registers 180. You can make several meals: (1) Place a chicken breast on a plate with a baked potato and mixed vegetables, (2) Cut up a chicken breast into cubes or strips, place a burrito wrapper flat in a skillet coated with oil spray, spread the chicken cubes/strips over half of the burrito wrapper and top with shredded mexican cheese. Fold the empty burrito half over the top of the chicken and cheese half and cook over medium heat for 2 minutes. Flip to other side and cook an additional 2 minutes. Transfer to plate and cut into 4 wedges. Serve with sour cream (to dip in). (3) Shred a chicken breast and mix with barbecue sauce. Heat in microwave for 40-60 seconds. Place on sandwich bun and serve with fried potato wedges or french fries topped with a 1/2 cup of canned chili and nacho cheese. (4) Cut a chicken breast into strips and serve over a plate of lettuce along with your favorite fresh veggies (broccoli, cauliflower, peas, mushrooms, onions, etc.), shredded cheese, and salad dressing.
If you prefer beef, buy a 3-pound roll of ground meat (chuck or round), thaw, and divide into 3 equal portions for the following:
Place the first pound in a glass dish and microwave on high 3 minutes at a time (cutting and mixing til crumbly) until meat is completely browned. Sprinkle 1/2 package of taco seasoning into the meat along with a couple of tablespoons of water and stir. Cook an additional 2 minutes. You can make several meals from this: (1) Warm up 1/2 cup of ground meat and 3 taco shells separately. Place 2-3 tablespoons of meat into each heated taco shell, add shredded mexican or cheddar cheese, shredded lettuce, salsa, and sour cream (to make 3 taco supremes). (2) Warm up 1/2 cup of ground meat and 1/2 cup of canned refried beans (separately). Place nachos on the bottom of a medium-size plate, top with the meat, then refried beans. Add shredded Mexican or cheddar cheese, sour cream, lettuce, and salsa (to make your own loaded nachos). (3) Warm up a burrito wrapper in the microwave for 30 seconds. Warm up 1/2 cup of meat and 1/2 cup of refried beans. Place the meat long ways in down the center of the burrito wrapper, keeping it about an inch or two away from the edge. Put refried beans on top of the beef, then add shredded Mexican or cheddar cheese, sour cream, and lettuce. At each end of the meat, fold the sides of the burrito in, then start to roll the burrito up by pulling one end of the burrito over the inside ingredients, tucking it in a little on the opposite side, and rolling the burrito contents up in it completely.
Place the second pound of ground beef in a microwavable dish, cover with a layer of frozen or fresh chopped onions and brown (as above). Place meat mixture in the bottom of a greased 13 x 9 x 2 pan. Salt and pepper the meat. Cut up 3 to 4 medium potatoes and place slices over the meat. Take 5 slices of American cheese and cut them into 4 strips each and spread over the potatoes. Mix 1 can of cream of mushroom soup with 3/4 can of milk and pour over the meat and potatoes. Cover with foil and bake in a 300-degree oven for 1-1/2 hours.
Place the third pound of ground beef in a microwavable dish, top with a layer of chopped onion (fresh or frozen), and cook (as above) until browned. In the meantime, heat 12 cups of water and 1 teaspoon of salt in a pan on the stove until boiling. Add 4 to 5 cups of dry egg noodles and cook for about 15 minutes until tender, then drain. Combine meat mixture with noodles and stir. Add 1 teaspoon of salt, 1/4 teaspoon of pepper, 1 can of cream of mushroom soup, 1 can of cream of chicken soup, 1 cup of sour cream, and 1 can of whole kernal corn (drained). Stir thoroughly until all ingredients are mixed well. Spoon into a casserole dish and bake at 350 degrees for 30 minutes.
